The most famous Italian recipe in our authentic reinterpretation: mascarpone cream, cocoa sponge cake bathed in coffee and fine cocoa to decorate.

There’s no need to talk about tiramisu: there are hundreds of different recipes ranging from the use of soft sponge fingers to white sponge cake, or cocoa, or Sardinian sponge fingers, which are more dry and crunchy.

The custard instead differs for the amount of mascarpone, but even more important is the choice of the raw material, which must be fresh and perfectly prepared.

But the hardest part is the coffee bath, which must be prepared as close as possible to when it is used, to maintain a strong yet never acidic taste.
